Eggnog Cheesecake

Indulge in the rich and creamy flavors of eggnog with a festive eggnog cheesecake topped with a sprinkle of nutmeg.

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup eggnog
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

For the Eggnog Topping:

  • 1 cup eggnog
  • 2 tablespoons cornstarch
  • 1/4 cup granulated sugar
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract
  • Ground nutmeg for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with butter or non-stick cooking spray.
  2. Prepare the Crust:
    • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of the prepared springform pan to form the crust.
  3. Bake the Crust:
    • Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.
  4. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth.
    • Add granulated sugar and beat until well combined.
    • Add eggs one at a time, beating well after each addition.
    • Mix in eggnog, flour, vanilla extract, ground nutmeg, and ground cinnamon until the batter is smooth.
  5. Pour the Filling:
    • Pour the cheesecake filling over the baked crust in the springform pan.
  6. Bake the Cheesecake:
    • Bake the cheesecake in the preheated oven for about 50-60 minutes or until the center is set. The edges should be slightly golden.
  7. Cool the Cheesecake:
    • Allow the cheesecake to cool in the pan on a wire rack for about 1 hour. Then, refrigerate for at least 4 hours or overnight.
  8. Prepare the Eggnog Topping:
    • In a saucepan, whisk together eggnog, cornstarch, granulated sugar, egg yolks, and vanilla extract.
    • Cook the mixture over medium heat, stirring constantly until it thickens. Remove from heat and let it cool.
  9. Top the Cheesecake:
    • Once the cheesecake is fully chilled, spread the eggnog topping over the surface.
  10. Chill Again:
    • Return the cheesecake to the refrigerator and let it chill for an additional 2-3 hours.
  11. Serve:
    • Before serving, sprinkle ground nutmeg on top for garnish.
